Pecan Pie Recipe

Ingredients
For the pastry (pie base):
1 cup plain flour
cup cubed butter
2 tbsp castor sugar
1 egg yolk
Filling:
cup golden syrup
cup butter
1/3 cup brown sugar
3 eggs
1 and a cup pecan nuts, halved
tsp vanilla essence
Method
1. To make the pie base, crumb flour and butter together then add eggs, sugar and 1 tsp of cold water. Knead to make smooth dough.
2. Roll out the dough and use it to line an 8 inch pie tin. Prick the base and fill it with baking beans.
3. Refrigerate for 30 minutes.
4. Preheat oven to 200C. Bake pastry for 10 minutes and heat the syrup and butter until the sugar dissolves.
5. Let it cool. Toss in eggs and vanilla essence and stir in the pecan nuts.
6. Pour the mix into the pastry and bake it 40 minutes.
7. Serve it with vanilla ice cream or cream of your choice.

16 cups cold water (4 quarts)
6 oz. linguini
Method
1. Wash the chicken in cold water and place all the ingredients in a 2-quart pot. Do not include the linguini.
2. Cover and bring to boil on high heat. Using a ladle, skim off the impurities and foam that rises.
3. Lower the heat and simmer gently, uncovered, for 2 hours. Skim the impurities 2 to 3 more times the impurities that develop.
4. Let soup cool for one hour and season with salt and pepper. Strain and set aside the liquid.
5. Discard celery, onion and herbs. Set aside chicken and carrots.
6. When chicken is cool enough, remove the meat from bones. Discard the skin and bones.
7. Cut chicken into bite sized pieces and slices the carrots. Place chicken and carrots in the liquid stock. Cover with plastic wrap. Refrigerate overnight.
8. Skim off and break linguini in half and let it cool. Bring soup to a boil and toss in linguini.

Method
1. In a huge bowl, mix garlic powder with salt and two tablespoon cornstarch and large eggs.
2. Stir the beef and coat thoroughly. Marinate it for 5 minutes.
3. Separate broccoli into florets and leave the stalk attached. Cook it in lightly salted boiling water for 3 minutes. Remove and keep warm.
4. Heat a wok and add vegetable oil. Cook the beef for one minute or until browned stirring constantly.
5. Drain the oil and add in the chicken stock, soy sauce and Tabasco sauce. Heat it again.
6. For the sauce, dissolve the remaining cornstarch in 1 tablespoon cool water. Stir into the beef mix.
7. Place beef in a serving plate and add broccoli at its sides.
8. Serve warm.

Chicken Cordon Bleu Recipe

700g chicken b****t fillets (approx 3-4)
salt & pepper to taste
3 slices of ham cut in to semi circles
50g swiss cheese cut in to 6 pieces
1 fresh bread roll (white, wholemeal, any kind you like) split in half toasted
1/4 cup parmesan cheese
2-3 tsp dried thyme leaves
olive oil spray
Method
1. Preheat oven to 180 degrees.
2. Mince the chicken by processing chicken in a food processor.
3. Season with salt and white pepper. Divide the micture into 4 balls.
4. Wrap once piece of cheese in a semi circle of ham. Add a piece of cheese to each side of the ham and wrap with another piece of ham around to prepare the filling.
5. Wrap one more piece of ham around the stack and cut into half. Repeat process for the remaining ham and cheese making 4 stacks.
6. Tear toasted bread roll into pieces and add in parmesan and herbs to make the crumbs.
7. To assemble, flat one ball of chicken mince and place one stack of ham and cheese in the center.
8. Wrap it with mince shaping into a ball.
9. Roll it in the breadcrumbs and place on a roasting dish. Repeat it with the remaining balls.
10. Spray in olive oil spray the balls and bake into oven for 35 minutes or until juice has run out.
11. Serve with mashed potato or a nice salad.
