Normally at this time of the year I write about holiday foods, be they for Easter or Passover. I LOVE holiday foods, probably because I only cook them once a year. This year I decided to head in a different direction. Normally this is a summer time meal as it uses only the freshest of produce. I live in sunny South Florida and fresh vegetables are available year round. Green Markets (farmers markets) seem to be in every city and town now. We have a GREAT one in our fair burgh too. To tie into the rum articles, there is my take on a delectable dessert.Vegetable Ribollita (Italian Vegetable Stew)Serves 4-68 ounces/225g dried cannellini beans1 tablespoon/15ml olive oil1 celery stalk, diced2 cloves garlic, minced1 carrot, diced5 pints/2.75 liters water****If you do not want to cook your own beans substitute 15ounce/420g cannedSoup:6 tablespoons/90ml olive oil1 medium onion, diced1 rib celery, sliced1 medium zucchini, diced2 carrots, peeled and diced4 cloves garlic, minced3 large tomatoes, peeled and chopped (15 ounces/420g)pinch red chili flakes1 sprig fresh rosemary1 spring fresh thyme1 pound/450g savoy cabbage1 pound/450g Swiss Chard, chopped1 teaspoon/5ml dried marjoram cup/118ml chopped fresh basil8 thick slices stale crusty sour dough or Italian bread, cut into cubes10 cups vegetable broth if using canned beans. cup/115g Pecorino RomanoSoak beans over night. Drain and rinse well. In a large soup pot over medium heat, add oil, then celery, garlic and carrot. Saute for 5-7 minutes. Add the beans and mix well. Pour in water. Bring to a boil, lower the heat and simmer for about 1 hour or beans are tender. Drain beans, reserving the cooling liquid.In a large soup pot or dutch oven over medium high heat, add olive oil. Once hot, add the onion, celery, zucchini, carrot and garlic. Saute for 5 - 7 minutes, stirring frequently. Add tomatoes and chili. Cook for another 5 minutes. Add rosemary, thyme, cabbage, chard, and marjoram. Stir to combine. Pour in reserved cooking liquid or vegetable broth. Bring to a boil, reduce heat, cover and simmer for 30-45 minutes. Add basil, stirring to combine. If eating right away add bread, increase heat and cook for 10 minutes. Ladle into bowls and sprinkle with cheese. If serving later, you can place a layer of the bread in the bottom of a large glass or earthen ware container. Ladle soup on top, then another layer of bread, soup, bread, soup. Place in the fridge to chill. Ladle into bowls, sprinkle with cheese and drizzle with extra virgin olive oil. Great at room temperature.Caribbean Coffee Puddingserves 64 eggs4 ounces/100g sugar1 cup/250ml strong cold coffee or espresso3 tablespoons/45ml dark rum ounce/15g clear gelatin2 cup/500ml whipping cream, divided in twoSeparate yolks and whites. Place the yolks and half of the sugar into a bowl. Whisk until smooth. Mix in cup/180ml coffee. Cook over double boiler, stirring constantly, until a thick custard forms (5-7 minutes). The custard should coat the back of a spoon. Sprinkle gelatin into remaining coffee. Heat and dissolve over hot water. Add the coffee mixture to the custard. Blend well and let cool in the refrigerator until stiffened. In separate bowls, whip the cream and egg whites with remaining sugar into stiff peaks. Fold both into the thickened custard. Pour into 6 ramekins and chill for another hour. Top with whipped cream and serve. See More
